Our Process
- Harvest – collected within hours of processing to lock in collagen and marrow.
- Clean – rinsed & surface-fat trimmed; never bleached.
- Slow Bake – smoked 24 hours at ≤ 200 °F to prevent splintering while preserving nutrients.
